Carrot Salad

Carrot Salad (about 2-carrots per person)

3 cups freshly grated carrots (about 4 medium carrots)

½ cup raisins

¼ cup of vanilla yogurt (if you like your salad dry put less and vice versa)

DIRECTIONS:

Combine carrots and raisins in a medium sized bowl. Cover and refrigerate until ready to serve. Add the yogurt and mix just before the dish is served. Makes 2 servings
