Blueberry Vinaigrette Dressing
⅓ cup 100% blueberry juice
¼ cup extra virgin olive oil
⅓ of a shallot (chopped)
⅓ of an orange pepper (chopped)
⅓ cup balsamic glaze vinegar
¼ tsp. ground mustard seeds
1 garlic clove (mashed and chopped)
Place the mustard seeds in a coffee grinder and grind until fine.
Combine all ingredients in a blender and puree until smooth.
Makes 1.3 cups
